Whenever the weather turns chilly and drizzles on the Central Coast I crave warm, hearty comfort food. The dish that best epitomizes comfort food is short ribs and mashed potatoes. The broth and red wine combination create a savory, silky taste that is the perfect compliment to the buttery mashed potatoes. For a dish that packs such a flavorful punch it is actually quite simple to prepare with relatively few ingredients.
Before starting, allow your ribs to reach room temperature and make sure they are dry. Season the ribs and sear in your favorite fat. Sauté carrots, garlic, and onions until tender. Add wine and let it reduce. Now is the time to put the ribs back in the pot with all the rest. Add any aromatics you'd like. Cover the ribs and cook them low and slow until they are falling apart.
One of our lovely 2023 couples is getting married at Cypress Ridge, Arroyo Grande (avid golfers) in February. The weather will likely be cool and so they decided to switch from our delicious tri-tip to our short ribs for their entree and a side of mashed potatoes as the perfect, cozy meal to serve to their guests.
